Perfect for Fall: Pumpkin-Cranberry Muffins

September is here and fall is right around the corner, which means it's time for all things pumpkin!

My favorite fall muffins are pumpkin cranberry. Did I mention I love pumpkin? (Except for pumpkin pie. I can take it or leave it. Strange, huh?) I've had this recipe forever and honestly, I don't know where it came from, but it is delish.

I've already started buying cans of pumpkin at the grocery. Once October rolls around, it's hard to find pumpkin. People start stocking up for their Thanksgiving pumpkin pies.
This recipe actually calls for chopped cranberries, but I prefer craisins.

You can modify the recipe for a healthier muffin if you'd like. Here's a few tips if you do:
  1. If you want to use whole wheat flour, use only half. An entire muffin with whole wheat flour is very dense and not very good. If you use half white and half wheat, which is what I do, it will taste great.

  2. Use egg beaters. I always do.

  3. Use Splenda Blend or half splenda and half sugar. (Be sure to read the conversion chart if you use the Splenda.)

  4. Use apple sauce instead of oil. This works ok, but I won't use it again.
Obviously, if you just follow the actual recipe, you won't be disappointed. Without further ado, here it is.

Pumpkin Cranberry Muffins
  • 2 eggs, slightly beaten(or egg beaters)

  • 2 cups sugar (I always use Splenda Blend)

  • 1/2 cup oil

  • 1 cup pumpkin

  • 2 1/4 cups flour (I use half white and half wheat)

  • 1 tbsp pumpkin pie spice

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 cup chopped cranberries (I use craisins)
Combine first four ingredients and mix well. Combine the rest of ingredients (except craisins) and add slowly to mixer. Mix until dry ingredients are moist. Do not overmix. Stir in craisins.

Spoon into greased muffin pans.

Bake at 350 for 30 minutes. (Oven times vary. My oven time varies. So, you may need to add or subtract a few minutes).

Makes 18 muffins.

You can also make pumpkin bread from this recipe. Simply use a loaf pan and double the baking time. A nice confectioner sugar glaze is a great finishing touch for the bread.

Updated: Recently, I ran across another pumpkin cranberry muffin recipe. Terri at That's Some Good Cookin' has a different recipe that includes a streusal topping. I'm definitely going to try my recipe with the streusal. My mouth is watering just thinking about it.

  12. What is it about pumpkin pie? I love pumpkin baking too but not pie. This recipe sounds great. I pinned it so I can try it later with my children. Last year we grew our own pumpkins and had our own pumpkin puree for baking with. :)
